Goji Oat Balls

Sustainable, healthy and tasty snacks aren’t always easy to come by. Think of that 3pm snack you need to tie you over until dinner time. You have an apple in the fridge but it just won’t hit the spot, so you head out for a coffee or banana cake… or maybe a chocolate bar that you beat yourself up about later?

These lil Goji Oat balls are quick to make, easy to pack and have great health qualities. The natural sugars will satisfy the sweetness hit you were craving and they are high in fibre from the oats, meaning slow burning and will help you feel fuller.

I made these in an attempt to try curb my crazy eating habits and eat smaller yet more frequent portions during the day instead of huge meals that I overindulge until I’m bursting at the seam. Literally.

 

1 1/2 Cups Organic rolled oats

4 fresh dates or 6 pitted dates (soaked in water for an hour)

1 teaspoon flour (I used spelt, but try maca powder for a superfood)

2 teaspoons cacao or carob powder

1/4 cup rice malt syrup, honey or maple syrup

1/2 cup goji berries

Mix all ingredients in a bowl, except for 1/2 cup of the rolled oats and the goji berries. Well combined well, all the remaining oats and goji berries.

You may need to add a touch of water to help them bind.

To roll the balls, use wet hands, it will avoid the mixture sticking to your hand.

Chill in the fridge and store in fridge or pantry.
